INFORMATIONS

Organoleptic profile: bright ruby red color. On the nose, hints of red fruits, dried flowers and Mediterranean bush spices. In the mouth it is savory and of good length, mineral, rightly tannic. The wine is complex and lends itself to good evolution with aging.

Pairings: accompanies more elaborate first courses, well-seasoned meat and fish main courses and even aged cheeses with balance.

Production Area: hilly area of the northeastern slope of Aspromonte, in the municipality of Ciminà.
Soils: soils rich in varicolored clays and Pliocene sediments with good organic matter.
Grape Variety: 100% SWEET MAGLIOCCO.
Training form: spurred cordon.
Planting density: 4000 vines/ha;
Grape yield per hectare: 60 quintals;
Harvest: Manual harvesting in boxes
Harvest time: mid-September
Winemaking technique: spontaneous fermentation of destemmed grapes in steel vats with 15 day maceration on the skins.
Aging: in amphora for 12 months with malolactic fermentation carried out spontaneously and then in the bottle. The wine is bottled by hand without any clarification or filtration.
