INFORMATIONS
Organoleptic profile: ruby red color with violet hues. The nose has hints of ripe red fruit, particularly blackberry and black mulberry, and floral hints of violets. In the mouth it is savory and fresh, mineral, delicately tannic. The wine is good drinking and is appreciated from a young age.
Pairings: wine with an everyday, all-meal approach, although far from banal. can be paired with all Mediterranean cuisine.

Production Area: hilly area of the northeastern slope of Aspromonte, in the municipality of Ciminà.
Soils: soils rich in varicolored clays and Pliocene sediments with good organic matter.
Grape Variety: 100% GRECO NERO.
Training form: spurred cordon.
Planting density: 4000 vines/ha;
Grape yield per hectare: 60 quintals.
Harvest: manual harvesting in boxes.
Harvest time: mid-September.
Winemaking technique: spontaneous fermentation of destemmed grapes in steel vats with 7 day maceration on the skins.
Aging: in amphora for 8 months with malolactic fermentation carried out spontaneously and then in the bottle. The wine is bottled by hand without any clarification or filtration.
