INFORMATIONS

Organoleptic profile: deep golden yellow color. The nose hints of yellow fruit and citrus, particularly apricot, mango, bergamot and fennel. the mouth it is broad, textural, juicy and slightly tannic. Characterful expression of the well-known Calabrian grape variety.

Pairings: perfect in pairing with Stocco (Stockfish), well-seasoned fish dishes and with caciocavallo cheese.

Production Area: hilly area of the northeastern slope of Aspromonte, in the municipality of Ciminà.
Soils: soils rich in varicolored clays and Pliocene sediments with good organic matter.
Grape Variety: 100% Mantonico;
Training form: Guyot and spurred cordon;
Planting density: 4000 vines/ha;
Grape yield per hectare: 70 quintals;
Harvest: manual harvesting in boxes;
Harvest time: early September
Winemaking technique:spontaneous fermentation of 50% destemmed grapes in steel vats with 48-hour maceration on the skins and 50% pressed whole.
Aging: in amphora for 8 months with malolactic fermentation carried out spontaneously and then in the bottle. The wine is bottled by hand without any clarification or filtration.
